Mustard Greens are a fast-growing annual with edible textured foliage forming a loose head. The thick and tender foliage should be ready for harvest in 40-50 days. Younger leaves have a more mild taste, and after bolting the leaves take a much stronger taste that is usually boiled instead of eaten raw. Best grown in full sun and rich, consistantly moist, well-drained acidic soils.
